Chef's Hatchet 2

$275.00 Sold Out

The Chef's Hatchet is made from a bulky old cleaver. The cleaver was completely reshaped to give it a better profile and weight. This chunk of high-carbon tool steel has been given a second chance as a slicing, dicing, and chopping tool in your personal or professional kitchen.

The steel has been annealed, hardened, and carefully tempered to give this blade a hard edge with superior flexibility. The blade has also been force-etched to create a patina on the steel, which helps prevent further corrosion of the steel over time. The blade boasts a full tang construction. Its handle is made from a stabilized piece of darkened Maple wood. The wood has been pinned to the blade with ¼” steel pins.

*Blade is sharpened with a steep convex grind and secondary bevel.

Cutting Edge: 60-63 HRC

Blade is approximately 3/16” thick, 2 ¼” deep, and 5 ½ ” long. Entire knife is roughly 9 ¾”.

Caring for knife:
Keep the knife as dry as possible. Do not soak in water. When finished cutting something wet or washing off blade, dry with a soft cloth. Small amounts of mineral oil should occasionally be wiped onto blade. Handle has been protected with satin lacquer.

*Purchase includes knife.
